Established in Orlando, Florida, in 2016, Smoke & Donuts® offers savory smoked barbecue and sweet hand-crafted donuts, harnessing smoking techniques and seasonings found in Texas, Tennessee, Kansas, and the Carolinas. Responsibilities (we'll train you on all of these!): The Cook position is a vital ingredient in our company. In a nutshell, when prepping, cooks are responsible for producing food from scratch, following S&D recipes, scaling, measuring, properly cooling, and storing food. When working the line, cooks are responsible for setting up their station, properly heating food, producing our menu of foods, and breaking down their station, following Smoke & Donuts SOPs and local/state/federal food safety guidelines. The position has a variety of responsibilities, some of which include: Execution of food-safety practices Ability and care to cook clean Regularly lifting 50# Standing, walking, bending, kneeling, leaning, and spinning around with your team (we call it "dancing" in the industry) for an entire shift Attentiveness to menu build guides (consistency is part of hospitality) Equipment use: Flat-top, fryer, sauté, stand mixer, convection oven, range, immersion blender, vacuum sealer, scale, processor Attractive plating, following demo or picture representations The ability to maintain calm in a busy environment Following all Smoke & Donuts' SOPs Lots of smiles! This is an open kitchen position. Work Experience: No restaurant experience is required. Sure, a culinary degree is fantastic, but not required. Culinary students who are currently attending school are also excellent candidates. The starting wage is based on experience/degree--Cooks are also part of our Tip Pool. We are prepared to train the right candidates! Skills: The most critical skill a candidate may bring to this position is an eagerness to learn and develop a new culinary acumen while honing existing skills. The position will require the candidate to be interested in learning or already familiar with the following. • Food safety knowledge • Following recipes & ratios • Scaling recipes & ratios • Organization & time management • Knife skills • Culinary fundamentals: properly fabricate and prepare/cook vegetables, meats, grains, legumes, pastries, pasta Cooking method, fundamentals: properly bake, roast, sauté, sous-vide, smoke, fry, braise, stew, poach, grill, pipe, blanch & shock, purée, dehydrate, juice, confit, liaison • The ability to maintain calm in a busy environment Education: Culinary education is super cool, but it is not required to be a great cook.
