FULL-TIME EXPERIENCED COCKTAIL BARTENDER / CAFÉ AND FOOD SERVICE TEAM MEMBER Big Aztec Corner Bar & Big Dog Gourmet Hot Dogs Downtown San Antonio | Historic Aztec Theatre | River Walk Big Aztec Corner Bar is hiring experienced, full-time hospitality professionals for our bar, café and food-service operation inside the historic Aztec Theatre in Downtown San Antonio. PLEASE READ BEFORE APPLYING This is a demanding, cross-trained position. It is not a bartender-only job. Every employee must be prepared to work across our cocktail bar, café, food counter and table-service areas. Team members bartend, prepare coffee and aguas frescas, take orders at tables, operate the POS, assemble and reheat food, serve customers, wash dishes, clean restrooms, restock supplies and complete opening or closing duties. Applicants who are only interested in preparing drinks and do not want to perform table service, food-service, cleaning or operational responsibilities will not be a good fit for this position. FULL-TIME SCHEDULE Full-time employees generally work four approximately 10-hour shifts per week, averaging approximately 40 hours. SHIFT 1 — OPENING • 6:00 AM to approximately 4:00 PM • Opening preparation begins at 6:00 AM • Customer service begins at 8:00 AM SHIFT 2 — MID SHIFT • 11:00 AM to approximately 9:00 PM SHIFT 3 — CLOSING • Sunday through Thursday: 4:00 PM through close and completion of closing duties • Friday and Saturday: 5:00 PM through close and completion of closing duties Customer service continues through posted business hours. Responsibilities include: • Assemble and serve gourmet hot dogs • Reheat prepared food according to company procedures • Prepare and serve breakfast tacos • Prepare toppings, condiments and service supplies • Follow portion, temperature and presentation standards • Maintain clean and sanitized food-preparation areas • Wash dishes, utensils and food-service equipment • Restock food, packaging and paper products • Cover, label, date and properly store opened or prepared food • Rotate inventory using first-in, first-out procedures • Record discarded products on the waste log AGUAS FRESCAS • Prepare aguas frescas according to established recipes • Measure and mix ingredients accurately • Fill, label, date and rotate containers • Maintain proper refrigeration • Monitor product freshness and levels throughout the shift • Clean and sanitize beverage containers and equipment POS AND CASH-HANDLING REQUIREMENTS Extensive restaurant, bar or hospitality POS experience is required. We use Union POS. On-site Union POS training will be provided, but applicants must already have substantial experience using a modern restaurant or bar POS system. Responsibilities include: • Enter food and beverage orders accurately • Open, manage, transfer and close customer tabs • Process cash and credit card payments • Maintain control of the assigned cash drawer • Verify orders and payments for accuracy • Follow company procedures for discounts, voids and corrections • Complete shift-change and end-of-day cashout procedures • Reconcile transactions and assigned funds • Maintain accuracy during high-volume service CLEANING AND SANITATION Cleaning is an essential responsibility of this position and is shared by the entire team. Restroom duties include: • Clean and sanitize toilets and sinks • Clean mirrors • Wipe walls and high-touch surfaces • Sweep and mop the floor • Empty trash and replace the liner • Restock toilet paper, soap and paper towels • Conduct opening, mid-shift and closing restroom checks • Correct cleanliness or supply problems immediately FOOD SAFETY AND INSPECTION READINESS • Wash hands at the designated handwashing sink • Use gloves or utensils when handling ready-to-eat food • Check and record refrigeration temperatures • Maintain cold food at 41°F or below • Maintain hot-held food at 135°F or above • Reheat applicable food to required temperatures • Prepare and test sanitizer solutions • Store wiping cloths in sanitizer between uses • Label and date prepared and opened products • Rotate inventory using first-in, first-out procedures • Keep chemicals labeled and stored away from food • Follow employee illness-reporting requirements • Inform management of vomiting, diarrhea, fever, jaundice or other symptoms that may affect food safety • Maintain daily logs and inspection-readiness records EQUIPMENT RESPONSIBILITIES Employees may be responsible for operating, cleaning and maintaining: • Union POS terminals • Espresso and coffee equipment • Frozen beverage machines • Soda guns and nozzles • Blenders and batch containers • Draft beverage equipment • Hot dog rollers, warmers and reheating equipment • Refrigerators and coolers • Three-compartment warewashing sinks Employees must follow the required daily, weekly and periodic cleaning schedules for each piece of equipment. OPENING AND CLOSING RESPONSIBILITIES • Complete all assigned opening or closing checklists • Prepare the bar, café, food station and customer area for service • Verify sanitation supplies and equipment are ready • Check and record cooler temperatures • Restock food, beverages, ice, cups and operating supplies • Properly cool, cover, label and store food • Shut down and clean assigned equipment • Complete cashout and POS procedures • Remove trash and recycling • Secure inventory, equipment and entrances • Remain until assigned closing duties are completed • Leave the operation prepared for the next shift ALCOHOL- AND DRUG-FREE WORKPLACE Big Aztec Corner Bar maintains an alcohol- and drug-free workplace for employees while working. GENERAL JOB EXPECTATIONS This position requires constant movement, urgency, personal responsibility and multitasking. During one shift, an employee may be required to prepare cocktails, make coffee, serve tables, operate the POS, reheat breakfast tacos, assemble gourmet hot dogs, prepare aguas frescas, wash dishes, clean the restroom, take payments and restock supplies. Team members must move between responsibilities without sacrificing customer service, food safety, cleanliness, responsible alcohol service or transaction accuracy. Most team members use nearby City of San Antonio parking garages, which typically cost approximately $10 per shift.
