LAMATA Masparillo

Selected from the “cava de mezcal” of Luis Loya, LAMATA brand creator. Maguey masparillo is a local name for an agave that typically grows in the state of Durango & other surrounding regions; it’s otherwise referred to as agave maximiliana. Made by Maestro Mezcalero Marcelo Flores, where he and his family produce agave spirits high in the sierras above Durango’s Temoaya Canyon in El Mezquital. After about 9 years to reach maturity, he cooks this agave using a traditional earthen pit oven, and then mills by hand, using a small axe. This masparillo was then fermented in pine wood-lined vats, using spring water. It was distilled twice in a “viejo” Filipino-style hybrid still of copper, wood, and agave quiote. It has a copper pot below and a conical barrel-like wood structure above, with a dried quiote (the reproductive stalk of the agave) as the exit tube - a romantic final touch before bottling. The nose makes ur mouth wake right up. There’s cinnamon candy, campfire crackles, & something vaguely familiar. It’s a fun ride, and deserves a spot on ur home bar. We split the 50-liter batch with Bar Crisol down in Tucson, so we only have about 25 bottles.

Derrumbes Michoacan Mezcal

Derrumbes Zacatecas Mezcal

Derrumbes Zacatecas is made from 100% Tequilana Weber in the village of Huitzila, Zacatecas, right across the majestic barranca (canyon) that divides it from the valley of Tequila. Being so close, Zacatecas is mostly known for mezcal produced in the fashion of tequila. The Bañuelos family however, are among few mezcaleros in Zacatecas that produce traditional mezcal. Pit roasted, tahona ground and spontaneously fermented, Derrumbes Zacatecas is a rare opportunity to travel back in time to experience a more ancient expression to Blue agave.

Batuq Bacanora

Made at Rancho Batuq, outside of San Pedro de la Cuerva, Sonora, Mexico, Batuq blanco is is produced with estate grown Yaquiana (or Pacifica, or agave Angustifolia) by hand every step of the way. The agave are cooked two ways - with mesquite and ironwood in an underground oven for 48 hours, and in a mesquite-fired autoclave. As such, the smokey flavor is precise, unique, and a perfect marriage with the agave flavors.

Yes, Texas makes sotol and it’s pretty good! Hundreds of years ago, Indigenous tribes in Texas used the spiky sotol plant for everything from tools and food to fermented drink. In keeping with that tradition, this producer uses only wild-harvested plants. It shows vanilla and green grass on the nose, leading to toffee, mint, and orange zest on the palate. The finish is custard-smooth with subtle hints of sage. We dig it!
